Crockpot Chicken Tortilla Soup

Colorful. Flavorful. And Freezable. Three words I love in soup. I found this Slow Cooker Chicken Tortilla Soup on the Pinterest. It is soooooo easy, and it’s a healthy dish that is filling and full of veggies.  The prep couldn’t be easier. Just place ingredients in the crockpot and stir. Cucumbers add crunch; tomatoes add sweetness. Oregano and garlic powder are my seasonings. It’s so simple and goes great with anything on the grill. Serve room temp or chilled!

Grilled Chicken Caesar

Sometimes a simple classic is all you need. Recently, The Husband requested Grilled Chicken Caesar.  No problemo, Husband. I like having this at home because you can control the amounts. In restaurants, it’s often drenched and who knows where the dressing came from. I use Lidia Bastianich’s Caesar Salad Dressing recipe. It’s my go-to. You don’t need to use the whole amount of dressing for this dish. Just store the […]
