Flyin’ Hawaiian Pizza

My son Evan has been requesting Pineapple Pizza all summer long. So a couple of weeks ago, we created one. The result is a tremendous two thumbs up! Now, now, culinary snobs – I so know that pineapple as a pizza topping is a total controversy, but dare I say the trifecta of pineapple, bacon and jalapeno is a mashup of deliciousness that will keep you coming back for more.

Pizza is a great dish to make with your kiddos. Evan and I hope you give this one a try. It is so good!

Flyin’ Hawaiian Pizza

Ingredients

  • For the pizza
  • 1 16-oz. ball pizza dough

  • 2 cups pizza sauce (recipe below)

  • 2 cups shredded mozzarella

  • 1 cup fresh pineapple, diced

  • 1 small jalapeno, minced

  • 3 strips bacon, diced, cooked and drained on paper towels

  • For the pizza sauce
  • 2 Tbsp. olive oil

  • 1 28 ounce can of crushed tomatoes (I like Cento)

  • 6 cloves of garlic minced

  • 1/4 tsp. crushed red pepper flakes

  • 1/2 tsp. oregano

  • Handful of shredded fresh basil

  • 1/4 tsp. salt

  • Fresh black pepper to taste

Directions

  • For the pizza
  • Lightly grease a 12 by 18 inch baking tray. On a lightly floured surface, roll out dough with a rolling pin into a rectangle to fit the baking tray. Carefully transfer dough to the baking tray. Using the tines of a fork, poke holes throughout the dough to prevent bubbling when baking. Cover dough with a tea towel, and set aside for at least an hour or until ready to use.
  • When ready to assemble, preheat the oven to 400 degrees Fahrenheit. Remove tea towel from tray and place tray in hot oven for 5 minutes. Remove from oven.
  • Carefully top with pizza sauce (recipe below). Next, top with shredded cheese. Next, top evenly with pineapple and jalapeno.
  • Return pizza to hot oven for 10 minutes. Remove pizza from oven and top with crumbled bacon. Return pizza to oven for 2 more minutes.
  • Remove pizza from oven and let it set for a few minutes before cutting with a pizza cutter or cooking shears.
  • For the pizza sauce
  • In a medium saucepan over medium heat, add olive oil. Add garlic, red pepper and oregano. Cook for 2-3 minutes until fragrant. 
  • Add crushed tomatoes, salt and pepper and basil. Bring to a simmer.
  • Cover partially and cook over low heat for 30-40 minutes, stirring occasionally.
  • Set aside until ready to use. Sauce may be made advance. Recipe may be doubled, and remaining portions may be frozen for later use.
