Roasted Cajun Potatoes

Cajun Roasted Potatoes may officially be my most fave potato side eva, and they are so easy to make. Simply toss with cajun seasoning, olive oil and black pepper and roast until your desired doneness is reached. This recipe uses red and/or new potatoes so you don’t even need to peel them!

But we often eat up the leftovers with eggs the next morning. So these make a perfect potato dish for a brunch as well.

Roasted Cajun Potatoes

Ingredients

  • 2 pounds red and/or new potatoes, washed, unpeeled, halved

  • 1 Tbsp. Cajun seasoning (if salt is in seasoning mix, do not add extra salt)

  • 1/4 tsp. black pepper

  • 1/4 Tbsp. extra virgin olive oil

  • 2 Tbsp. flat leaf Italian parsley, chopped

Directions

  • Preheat oven to 425 degrees Fahrenheit.
  • In a medium bowl, add Cajun seasoning, olive oil and black pepper. If Cajun seasoning is salt-free feel free to add salt to taste. Mine has salt, so I do not add extra salt. Stir ingredients together.
  • Add halved potatoes to cajun mix. Toss until potatoes are coated with the mixture.
  • Place prepared potatoes onto a baking sheet in a single layer. (You may line the baking sheet with parchment if desired for easier cleanup.)
  • Roast for 20 minutes. Remove pan from oven and toss potatoes. Return to hot oven for 10 more minutes. Remove pan from oven and toss again, returning for 5-15 minutes or until potatoes are nicely browned and cooked through.
  • Sprinkle potatoes with chopped parsley. Serve hot or warm.
