Chicken wings are super easy to make at home. This version isn’t traditional, but I think my Jersey Girl readers will LOVE them as my husband and son did. The key to success is to be sure to let the wings hang out in the fridge for at least an hour after coating them in the baking soda and seasonings. Also, be sure to not overcrowd the pan. These two steps guarantee crispiness. If you double the recipe, use multiple baking sheets so that the wings have plenty of room to cook and crisp up.
Wings are often sold unseparated so be sure to check out my video at the bottom of the recipe if you do not know how to split a chicken wing into the wingette and drumette. Have no fear, it’s not that hard. Promise to God.
Garlic Parmesan Chicken Wings

- For the wings
2 1/2 lb. chicken wings, halved at joint
1 Tbsp. baking powder
1 tsp. garlic powder
1/4 tsp. paprika
1/4 tsp. black pepper
1/4 tsp. salt
Pam or non-stick baking spray
- For the garlic sauce
4 Tbsp. unsalted butter
4-6 garlic cloves, minced
1/4 tsp. cayenne pepper (or more to taste)
1/4 tsp. garlic powder
1/8 tsp. salt
1/8 tsp. black pepper
3 Tbsp. chopped flat leaf parsley
Fresh grated parmesan to taste
Directions
- For the wings
- Cover a baking sheet with aluminum foil. Place a wire rack on top of the foil-covered sheet. Spray with non-stick spray. Set aside.
- At least an hour ahead or up to 24 hours ahead, combine baking powder, 1 tsp. garlic powder, paprika, 1/4 tsp. salt and 1/4 tsp. black pepper in a large bowl. Add chicken wing pieces and toss with your hands or tongs until the wings are coated in the baking powder and seasonings.
- Place coated wings on prepared baking sheet and rack and then place uncovered in the refrigerator for at least an hour or up to 24 hours.
- When ready to cook, preheat oven to 450 degrees Fahrenheit.
- Place the wings in the oven and bake for 18 minutes. Flip the wings and return to oven for at least 10 more minutes. Depending on size, they may need to cook for another 5 minutes or so. Serve with garlic sauce (see below) and grated parmesan.
- For the garlic sauce
- In a small saucepan, add unsalted butter, minced garlic, cayenne pepper, 1/4 tsp. garlic powder, 1/8 tsp. black pepper, 1/8 tsp. salt and fresh parsley. Heat over medium-low heat until butter melts and ingredients are well blended. Drizzle over wings and grate fresh parmesan cheese over the coated wings to serve.
