
Asparagus season is upon us here in NJ. My Grilled Asparagus with Lemon Thyme Dressing is prepared on my trusty old grill pan, and is so simple. You absolutely must give this recipe a try!

Lemon, thyme and parsley in a simple dressing add a bright touch to the springy earthiness of this super special veg. I hope you enjoy this very easy dish!
Grilled Asparagus with Lemon Thyme Dressing

- For the Asparagus
1 bunch asparagus, about 1 1/2 lbs., washed, dried, and ends trimmed
1/2 tsp. salt
1/2 tsp. black pepper
2 Tbsp. extra virgin olive oil
- For the Lemon Thyme Dressing
Zest and juice of 1 lemon
1 tsp. dried thyme, or 2 tsp. minced fresh thyme
1/4 tsp. salt
1/4 tsp. black pepper
2 Tbsp. extra virgin olive oil
2 Tbsp. fresh flat leaf parsley, minced
Directions
- For the dressing
- In a small bowl, whisk together zest and juice of 1 lemon, minced thyme, salt, pepper, olive oil and fresh flat leaf parsley. Set aside until ready to use.
- For the asparagus
- Line up prepped asparagus on a baking sheet. Drizzle with olive oil. Season with salt and pepper. Toss until all spears are well coated.
- Heat up a large grill pan over medium high heat. Once hot, add half the asparagus spears to the pan. Brown on all sides, about 6-8 minutes. (Thicker asparagus takes longer to cook, than thinner.) Set aside onto serving platter. Repeat with remaining asparagus spears.
- Once all asparagus is cooked. Drizzle with the Lemon Thyme Dressing while asparagus is still warm. Serve warm or at room temperature.
