This recipe for Soba Noodles with Sesame Seeds is a fave when we are doing an Asian themed dinner. The recipe comes from my girl Nigella Lawson. Soba noodles are in the Asian aisle of the grocery store. If you can’t find them in your local spot, order a pack online.

This dish requires minimal prep and cooking, so it’s perfect for summer!

Soba Noodles with Sesame Seeds

Ingredients

  • 1/3 cup sesame seeds

  • Salt (if noodle package says they can be cooked without salt, you can omit this. I do not use salt)

  • 8 ounces soba noodles

  • 2 tsp. rice vinegar

  • 5 tsp. soy sauce

  • 2 tsp. honey

  • 2 tsp. sesame oil

  • 5 scallions, cleaned and sliced

Directions

  • Toast the sesame seeds in a dry pan over high heat until they look golden brown. Set aside into a bowl.
  • Bring a large pot of water to a boil and add some salt if using. Put in soba noodles and cook them for about 6 minutes (or according to package instructions) until they are tender but not mushy. Have a bowl of iced water waiting to lunge them into after draining.
  • Once noodles are cooked, transfer to bowl of iced water with a pasta ladle. Cool down for a minute or two. Then, pour noodles and ice water into a colander. Drain well.
  • In your serving bowl, mix the vinegar, soy sauce, honey and oil. Toss your noodles and scallions with the sauce. Add sesame seeds. Toss again.
  • Leave the sesame seed noodles for about half an hour to let the flavors develop, although this is not absolutely necessary or sometimes even impossible.
