Arugula and Celery Salad

My Arugula and Celery Salad is ready in less than 10 minutes and is a perfect side to anything, especially in the summer when you may feel like not spending a ton of time cooking.

Feel free to add a squeeze of lemon juice if you wish. But, we prefer this salad with a simple drizzle of the best olive oil you can get your hands on.

Ingredients

  • 4 cups baby arugula

  • 2 stalks of celery, chopped

  • 2 Tbsp. parmigiano or prima donna cheese, chopped

  • 1/4 tsp. salt

  • Fresh black pepper to taste

  • 2 Tbsp. really good extra virgin olive oil

Directions

  • In a salad bowl, toss argula and celery with salt, pepper and olive oil. Top with cheese. Serve!
