Buffalo Chicken Salad has been a staple up in here for a bazillion years. I make this often when I just can not think about cooking, but the reality is I need to cook something to feed these humans that live with me aka The Husband and the Son. Fortunately, my dynamic duo LOVE Buffalo Chicken Salad and think it is all that and a bag of chips, soooooo win-win.
I consider it more as my Basic Bitch Dinner. Probably because I’ve made it so many times, and it’s so easy. Yes, you can use a bottle of Blue Cheese Dressing if you wish, but trust and believe my recipe for Blue Cheese Dressing is SOOOOOO much better than that bottled mess. And it really takes five minutes from start to finish. If you have wing lovas in your world, make this!
Buffalo Chicken Salad with Blue Cheese Dressing

- For the salad
1 head romaine lettuce, chopped
½ red bell pepper, chopped
1 carrot, peeled and chopped
1 rib of celery, chopped
¼ red onion, chopped
1/2 cucumber, peeled if desired and chopped
- For the Very Manly Blue Cheese Dressing
5 ounces of crumbled blue cheese
¼ cup mayonnaise
½ cup sour cream
1 or 2 Tbsp. milk depending on your desired consistency
1 tsp. Worcestershire sauce
1 Tbsp. scallion greens or chives, finely chopped
¼ tsp. black pepper
Pinch of salt
- For the Buffalo Chicken Tenders
1 pound chicken tenders
¼ cup all-purpose flour
¼ tsp. ground black pepper
¼ tsp. salt (if your Cajun seasoning contains salt, feel free to omit the salt)
2 tsp. Cajun seasoning
1/3 cup favorite wing sauce such as Frank’s Red Hot Wings Sauce
2 Tbsp. butter
Directions
- For the Salad
- Place all veggies in a bowl. When ready to serve top with buffalo chicken (recipe below) and dressing (recipe below).
- For the Very Manly Blue Cheese Dressing
- Combine all the ingredients in the bowl of a standing mixer. Mix on low until combined. The dressing should be thick and very blue cheesy.
- Chill until ready to serve.
- For the Buffalo Chicken Tenders
- In a wide bowl, place flour, pepper, salt and Cajun seasoning. Mix together with a whisk or fork.
- Place each chicken tender in the flour mixture. Toss until coated.
- Meanwhile, in a large skillet, melt the butter over medium heat. Once skillet is hot, place chicken tenders in sizzling butter. Brown on all sides, about 5 to 6 minutes. If you need to cook the chicken in two batches, just remove the first browned batch to a kitchen plate and repeat with second batch.
- Once chicken is browned and all tenders are returned back to the pan, pour in wing sauce. Cook for about 2 to 3 more minutes, until sauce coats the chicken and is heated through. Remove from heat.
- To Assemble Salad Platters
- Place salad mixture on dinner plates. Top with two or three chicken tenders. Dollop with Blue Cheese Dressing.
