
If you find yourself with beacoup amounts of fresh strawberries, you gotta give this Strawberry Jam recipe a whirl. It requires no more than the strawberries, sugar and a lemon. You have to give the pot of simmering strawberries a bit of tender love and care by stirring and smashing every few minutes, but the results are soooo worth it.

1 quart fresh strawberries, hulled and cut in half
1/2 cup to 3/4 cup sugar (depending on how sweet you want it)
Zest and juice of 1 lemon
Directions
- In a large pot over medium-high heat, add prepared strawberries, sugar and lemon zest and lemon juice. Bring to a boil and stir with a wooden spoon. Boil for about 5 minutes.
- Lower heat to medium so that mixture comes to a simmer. Using a potato smasher, break up the strawberries. Lower heat again to low. Simmer for about 35-40 minutes uncovered while stirring and smashing the strawberries every 5 minutes. During the process, the mixture will become thicker and syrupy. Jam is finished when it is to the consistency you prefer.
- Let cool and store in an airtight container in the refrigerator for up to two weeks, or freeze.
- Serve at room temperature or cool on warm toast, scones, biscuits or muffins.
