Salsa Fresca


Fresh salsa is so great to make when you are having a taco night or a Mexican theme dinner at home. It’s also a hit at parties. There’s not cooking involved, just a bit of chopping. Here’s a great recipe for the next time you need a salsa fix! It is so worth it!

Ingredients

  • 2 lbs. tomatoes, diced

  • 1 jalapeno, finely diced (about 1 Tbsp.)

  • ½ medium red onion, diced (about 3/4 cup)

  • 4-5 scallions, sliced (about 1/2 cup)

  • 3 Tbsp. cilantro, finely chopped

  • Juice of 2 to 4 limes (about 2 Tbsp.)

  • 1/4 tsp. salt (add more if desired)

  • 1/4 tsp. fresh black pepper

Directions

  • Mix all the ingredients in a bowl. Let marinate at room temperature for about an hour.

    Serve with favorite tacos, chips, etc.
