Lime Cilantro Chicken

Lime Cilantro Chicken is a festive and fun protein that makes Mexican Night at home a total cinch. We love to make tacos out of the grilled chicken strips marinated in lime, chili, garlic and a few more sensational seasonings.

Be sure to marinate your chicken for at least an hour. For a Taco Night setup, serve with your fave salsas, shredded cheese, lettuce, beans and hard and soft shells. This chicken is also great with rice or over a salad.

Lime Cilantro Chicken

Ingredients

  • 3 lbs. chicken breast, cut into strips or chicken tenders

  • 3 cloves garlic, minced

  • 1 tsp. garlic powder

  • 3 Tbsp. chili powder

  • 1 ½ tsp. cumin

  • 1/2 tsp. coriander

  • 1/2 tsp. salt

  • 1/4 tsp. black pepper

  • Zest and juice of 1 large lime

  • 4 Tbsp. extra virgin olive oil

  • 1/4 tsp. cilantro, minced

Directions

  • In a large bowl with a lid, add minced garlic, garlic powder, chili powder, cumin, coriander, salt, black pepper, lime zest, lime juice and olive oil. Whisk until well combined. Add chicken. Using your hands, toss the chicken to coat evenly in marinade. Cover and refrigerate for an hour or up to 8 hours.
  • When ready to cook, preheat a grill pan over medium high heat for 2-3 minutes. In batches, grill chicken pieces for 4 minutes per side. Set aside in a covered dish to keep warm. Continue until all chicken is grilled.
  • Top cooked chicken with fresh cilantro.
  • To serve: Use as a taco filling or serve with rice, beans and your fave veggie.
