Cheesy Scrambled Eggs

I make my Cheesy Scrambled Eggs at least once a week for a solo lunch or for my son. They are so luxurious and satisfying.

For about five years now, I have been making them for our Family Fantasy Football Draft. Now, this event features at least a crowd of 10 so I’m sharing with you how to make them for your next big brunch. The process to make the scrambled eggs for 10 takes significantly longer than it does for 1 person. In step 5 of my recipe, I share the measurements and calculations to make this dish for a solo diner.

The keys to successful scrambled eggs are:

  1. Start the pan hot. Add the eggs. Lower the heat to low. Cook the eggs slow and low stirring constantly.
  2. Whisk the eggs well.
  3. Season well.

Cheesy Scrambled Eggs for a Crowd

These Cheesy Scrambled Eggs for a Crowd are delish when you are hosting a big gang. But I also list how to make them for just one in Step 5.

Ingredients

  • 24 extra large eggs

  • 1 cup milk

  • 1 tsp. salt

  • 3/4 tsp. fresh cracked pepper

  • 5 Tbsp. unsalted butter

  • 1 1/2 cup shredded cheddar jack cheese

Directions

  • In a large mixing bowl, crack eggs. Add milk, salt and pepper. Whisk with hand beaters on medium speed (or use a hand whisk) until frothy.
  • In a large pan with 2-inch high sides, melt butter over medium high heat. Swirl melted butter around the pan to coat the entire bottom.
  • Once butter is melted, add the egg mixture slowly to the hot pan. Cook for 2 minutes, then lower the heat to low. Using a rubber spatula, gently push the eggs so that they cook and form glossy soft curds. This may take 15-20 minutes depending on the heat of your stove.
  • Once the mixture is almost cooked, add shredded cheese. Stir with spatula. Add more salt and pepper if desired. Serve immediately or transfer to a warming tray to stay delicious and fluffy for your brunch party!
  • To make this dish for one: Beat 2-3 eggs with 3 Tbsp. milk. Salt and pepper to taste. Heat just 1 Tbsp. butter in a pan over medium high heat. Add the egg mixture. Cook for 30 seconds, then lower heat to low. Using a rubber spatula, gently push the eggs so that they cook and form glossy soft curds. Add 1/4 cup of shredded cheese. Entire process takes about 4-5 minutes. Serve and dig in!
