Ingredients
2 lbs. tomatoes, diced
1 jalapeno, finely diced (about 1 Tbsp.)
½ medium red onion, diced (about 3/4 cup)
4-5 scallions, sliced (about 1/2 cup)
3 Tbsp. cilantro, finely chopped
Juice of 2 to 4 limes (about 2 Tbsp.)
1/4 tsp. salt (add more if desired)
1/4 tsp. fresh black pepper
Directions
- Mix all the ingredients in a bowl. Let marinate at room temperature for about an hour.
Serve with favorite tacos, chips, etc.
