Korean Spinach

Korean Spinach

Ingredients

  • 2 scallions, minced

  • 1 clove garlic, minced

  • 1 Tbsp. sesame oil

  • 1 Tbsp. soy sauce

  • pinch of red pepper flakes (optional)

  • 1 lb. baby spinach

  • 1 tsp. toasted sesame seeds.

Directions

  • In a serving bowl, whisk together scallions, garlic, sesame oil, soy sauce and red pepper flakes, if using.
  • Set up an ice bath by filling a large bowl with water and ice cubes.
  • Bring a large pot of water to a boil. Add baby spinach. Simmer for 1-2 minutes. Drain spinach in a colander and add to ice bath. Set aside for 5 minutes.
  • Drain spinach in a colander and remove ice cubes if necessary.
  • Squeeze out all of the water from the spinach. It is going to look like a small ball of spinach!
  • Add drained spinach to soy sauce mixture. Toss until well coated. Top with toasted sesame seeds. Serve room temperature with your favorite Korean bowl of rice, meat and veggies.
